Quick #MealPrep with Suddenly Grain Salad

If you are anything like me, you are always looking for a way to squeeze every single moment out of the day. With packed schedules the moment our feet hit the floor in the morning, why leave cooking dinner to when you are exhausted from a long day of work, school, errands, you name it!#MealPrep (1)

Personally, I know that when I fail to plan for my weekly meals in advance, my family and I will reach out for the convenience of take-out.  And, now that Cora is in Kindergarten and goes to a separate after-school program, we have added a little more commute time to our evenings.  This definitely cuts into meal prep time!  Our solution? I would say about 90% of our meals are thrown on the grill.  While my hubby is monitoring the grilling of some fish, meat and veggies, I can throw together a Suddenly Grain Salad to round out the meal.  It’s perfect because it is easy, quick, and virtually leaves no mess!

  2. I have never tried one of those. I have made those suddenly pasta salads which I Iike but I dont think they are the healthiest. I will have to try this one out. Since there are grains, I’m sure it is a bit healthier

    • They are pretty new to the market! Here's a little bit of nutrition info if that is a concern:

      Southwest Grains has brown rice, quinoa, black beans, corn, and red peppers with chipotle vinaigrette dressing – a ½-cup cooked has 170 calories, 4.5 grams of fat, 3 grams of fiber, and 290 milligrams of sodium.

      Tuscan Grains has brown rice, wheat berries, quinoa, almonds, and red peppers with tomato parmesan herb dressing – a ½-cup cooked has 210 calories, 9 grams of fat, 2 grams of fiber, and 290 milligrams of sodium.

      Harvest Grains has brown, wild and red rice, quinoa, cranberries and almonds with blush wine vinaigrette dressing – a ½-cup cooked has 200 calories, 7 grams of fat, 3 grams of fiber, and 170 milligrams of sodium.

    • When I was asked to participate in this campaign, it automatically brought me back to the days of eating the pasta versions. My mom always made the Ranch pasta salad for BBQs! You should definitely give it a try!

  4. I can't wait to try some–I am desperate to work in more grains but most recipes require way more time than I am ever going to spend on a side dish. Love the idea of taking leftovers for lunch. Though I have to admit I can never see these and not think of my dad joking around in the kitchen by over-dramatically announcing "Suddenly, it's salad!" It took me way too long to realize he hadn't made it up himself.
